Our food menus aim to offer our interpretation of modern Scottish cooking.

In the evening, our full tasting menu is a journey through food, some courses larger than others, but always with intensity of flavour and balance at their core.

Our short tasting menu is a more concise version of the full menu and is available on Friday and Saturdays at Lunch, and Wednesdays and Thursdays in the evening.

The provenance and quality of the produce used is always a key consideration for us in the kitchen.

With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder.

Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate.

We think that dining like this should be an experience, something to enjoy, a lively atmosphere removed from the stuffiness that clings to the fine dining tradition.

The tasting menu shows real culinary skill, depth of flavour, knowledge and a reminder that dining out is meant to be fun

Cardinal stands out as not just a restaurant but a full sensory experience, marrying Michelin star quality with a warmth and accessibility often lost in fine dining

A little about our wines and drinks programme. .

Throughout our list you will find a carefully curated selection from some of the most talented producers across Europe.

In keeping with our own ethos and philosophies, we only work with producers who are making their wines consciously - living with the land rather than on it and enriching their communities and the environments they cultivate, rather than detracting from them.

With biodynamic and regenerative practices at the heart of everything, the resulting wines are vibrant, full of life and truly evocative of where they come from.

We hope you enjoy them as much as we do.
