With an abundance of local and sustainable suppliers at our doorstep, we’re fortunate to work with some of Scotland’s finest producers—from lobsters and crabs from Belhaven Lobsters in Dunbar to vegetables and native breed meats from Free Company Farm in Balerno. Scotland’s natural larder is unmatched, and we take pride in showcasing its best.

Cooking over coals adds an extra depth of flavour to our dishes. It’s an intuitive, engaging process that brings a unique character to our food—something we believe translates onto the plate.
